Raspberry Lime Chia Pudding is a light, refreshing treat that's perfect for breakfast, a snack, or dessert. It combines the tangy zest of lime with the natural sweetness of raspberries, all blended into a chia seed. The chia seeds absorb water, creating a pudding-like texture, while the lime adds a burst of citrus flavour. Paired with juicy raspberries, it's a vibrant, nutrient-packed dish that's both satisfying and healthy.
Ingredients
2 cups (480ml) spring water
2 cups frozen raspberries
2/4 cup chia seeds
Zest of 1 lime
Juice of 1 lime
2 drops liquid stevia (adjust to taste)
Instructions
Chia Pudding:
In a container, whisk together chia seeds, lime zest, lime juice, stevia, and water. Let sit for 5 minutes, whisk again, cover, and refrigerate for 4+ hours or overnight until thickened.
Serve:
Layer or mix with raspberries. Garnish with lime zest if desired. Serve chilled.
Storage Tip: Keep in the fridge for up to 3 days.
