Ingredients
Burger Patties:
1 lb (450g) ground beef (80/20 fat ratio is ideal)
4 tbsp butter, divided (softened)
Salt and freshly ground black pepper
4 slices of American cheese
Buns:
4 brioche buns
Sauce:
½ cup mayonnaise
2 tbsp ketchup
1 tbsp yellow mustard
1 tbsp diced pickle or relish
Toppings:
Romaine or iceberg lettuce
Sliced tomato
Sliced pickles
Sliced onions
Instructions
Prepare the Patties:
In a bowl, combine ground beef, 2 tbsp softened butter, salt, and pepper. Mix gently without overworking.
Divide into 4 equal portions (about 4 oz/113g each).
Place each portion between two sheets of parchment paper. Press down firmly to form a thin patty slightly larger than the bun.
Toast the Buns:
Heat a skillet or griddle over medium heat.
Spread 2 tbsp butter on the cut sides of the buns. Toast them, cut side down, until golden brown. Set aside.
Cook the Burgers:
Heat a cast iron skillet over medium-high.
Place a patty in the hot pan and cook undisturbed for about 2–3 minutes, until edges crisp and a crust forms.
Flip the patty, top with a slice of cheese, and cook for another 1–2 minutes until the cheese melts and the meat is cooked through.
Make the Sauce:
In a small bowl, mix mayonnaise, ketchup, mustard, and diced pickle or relish until smooth.
Assemble the Burgers:
Spread sauce on the bottom bun.
Add lettuce, tomato, pickles, and onions.
Place the cheesy burger patty on top.
Spread more sauce on the top bun and place it on the burger.
