Crispy Fried Chicken Wings

If you're craving fried chicken but want a gluten-free option, using cornstarch instead of flour creates a light, crispy coating that adds a unique crunch. The result is a flavourful fried chicken with juicy, tender meat inside.


Serves: 4 Prep Time: 20 minutes Cook Time: 15-20 minutes


Ingredients:

For the Marinade:

  • 10-12 chicken wings

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp cayenne pepper

  • ½ tsp paprika

  • ½ tsp ground black pepper

  • ½ tsp salt


For the Dredge:

  • ½ cup cornstarch

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp cayenne pepper

  • ½ tsp paprika

  • ½ tsp ground black pepper

  • ½ tsp salt


For Frying:

  • Avocado oil (for frying)


For the Hot Sauce Drizzle:

  • Hot sauce (e.g., PEPPER NORTH Wild Blueberry & Scorpion hot sauce, PEPPER NORTH Black Cherry & Reaper hot sauce, or your favourite)


For the Blue Cheese Sauce:

  • ¼ cup blue cheese (crumbled)

  • ½ cup sour cream

  • 2 tbsp mayonnaise

  • 1 tsp lemon juice

  • Splash of water to give a lighter consistency

  • Pinch of salt and pepper


Instructions:

  1. Marinate the Chicken: In a bowl, combine the chicken wings and the marinade ingredients.Cover and marinate while you prepare everything else (or for 30 minutes to 2 hours in the fridge).


  1. Prepare the Dredge: In a separate dish, mix together the dredging ingredients.Dredge each wing thoroughly in the cornstarch mixture, pressing lightly to ensure an even coating.


  2. Fry the Wings: Heat avocado oil in a large skillet or deep fryer over medium-high heat to about 350°F (175°C).Fry the wings in batches for 8-10 minutes, turning occasionally, until golden brown and crispy.Check that the internal temperature of the wings reaches 165°F (75°C). Once done, remove from the oil and drain on paper towels.

  3. Make the Hot Sauce Drizzle: In a medium-sized bowl, add the fried wings and hot sauce. Shake or toss to coat the wings evenly with the hot sauce.

  4. Make the Blue Cheese Sauce: In another small bowl, combine the crumbled blue cheese and all the sauce ingredients. Mix until smooth.

  5. Serve: Serve the wings with a side of celery and carrots, and blue cheese sauce for dipping.
