A comforting dish – fluffy and crisp French toast, made with buttery brioche, topped generously with fresh berries, whipped cream, and a healthy glug of dark maple syrup, makes this dish both decadent and casual.
Ingredients:
For Custard:
3 large eggs
1 cup whole milk
1 cup 35% whipping cream/heavy cream
1 tbsp pure vanilla extract
1/2 tsp ground cinnamon (optional)
For Cooking:
4-6 slices brioche
2 tbsp butter
1 tbsp avocado oil (for additional crispness)
For Serving:
Fresh raspberries, blackberries, strawberries, blueberries
Whipped cream (whipping cream, cinnamon, sugar)
Powdered sugar
Maple syrup
INSTRUCTIONS:
Prepare the Custard:
In a large bowl, whisk together the eggs, milk, cream and vanilla extract. Ensure the mixture is fully combined and smooth.
Prepare the Bread:
In a single layer submerge brioche slices into the custard, allowing it to soak for a total of 2 minutes.
Heat the Pan:
In a large skillet or griddle, heat 1 tablespoon of butter and oil over medium-low heat until melted.
Cook the French Toast:
Place the brioche slices onto the heated skillet. Cook on medium-low for 3-4 minutes per side, or until golden brown and crisp. Flip the bread carefully with a spatula to avoid breaking the slices.
Serve:
Once cooked, it's best to serve right away while warm with a generous amount of fresh berries, drizzle of maple syrup, whipped cream, and a dusting of powdered sugar.
