Tzatziki

Ingredients:

  • 500g (approx. 17 oz) plaine 4% or higher Greek yogurt

  • ½ English cucumber, peeled and grated

  • 2 tbsp fresh dill, chopped

  • 1 small garlic clove, grated

  • Juice of 1 lemon

  • 1/4 tsp lemon zest

  • 1 tbsp olive oil

  • 1/2 tsp sea salt (or to taste)


Instructions:

  1. Prep the Cucumber

    Grate the peeled cucumber, add salt and let sit to draw out moisture. Use your hands to squeeze out as excess moisture.

  2. Mix the Base

    In a bowl, combine the Greek yogurt and grated cucumber.

  3. Add Flavor

    Stir in dill, lemon juice, zest, pressed garlic olive oil, and salt.

  4. Mix Well

    Mix thoroughly until smooth.


  5. Let it Rest (Optional but Recommended)

    Cover and refrigerate for a few hours, to let the flavors develop.


  6. Serve Cold

    Serve chilled Spanakopita.


Tips:

  • The flavor improves the longer it rests. Always taste again before serving—you might want to adjust salt, garlic, or dill.

  • Make sure the cucumber is well-drained to keep the tzatziki thick and creamy.
