Tomato Achar and Jhol for Momo

Achar is a spicy, tangy condiment made from blended spices, herbs, and seeds, often used to add intense flavour to dishes.

Jhol is a thinner, soup-like version of achar, typically served warm as a dipping sauce or broth to accompany momos, enhancing their taste with a spicy, aromatic kick.


Ingredients

  • 4 medium-sized tomatoes

  • 1 medium-sized onion

  • 1.5 teaspoons minced ginger

  • 1.5 teaspoons minced garlic

  • 1 tablespoon fresh cilantro, chopped

  • 1 green chili or serrano pepper, finely chopped

  • 1 tablespoon red chili powder

  • 1.5 teaspoons cumin powder

  • 1.5 teaspoons coriander powder

  • 2 teaspoons turmeric powder

  • 1 cup roasted white sesame seeds

  • 4 tablespoons avocado oil, for frying


Instructions:

  1. Begin by dry roasting the white sesame seeds over medium heat until they achieve a rich, golden aroma and a toasted hue. Set aside to cool.


  2. In a heated pan, warm the avocado oil over medium flame. Introduce the finely chopped onion and sauté until..


  3. Add the green chili, allowing it to infuse the oil for approximately one minute.

  4. Add the chopped tomatoes and cook gently until soft.

  5. Stir in the roasted sesame seeds along with the red chili powder, cumin, coriander, turmeric, ginger, and garlic. Combine thoroughly to meld the spices with the base ingredients.

  6. Allow the mixture to simmer, stirring occasionally, until it thickens to a rich, cohesive consistency.

  7. Fold in the freshly chopped cilantro, stirring to distribute evenly throughout the mixture.

  8. Remove from heat and allow the mixture to cool slightly before transferring it to a blender. Puree until completely smooth and velvety.


Jhol (Soup) for Momo

To transform this achar into a flavorful jhol, thin the paste with water until reaching your preferred consistency. For an added depth of heat and complexity, introduce Sichuan Peppers and chili flakes and blend until smooth.
