Cranberry Thyme Orange Scones

These Cranberry Thyme Orange Scones are a delightful twist on a classic treat, combining the bright citrus flavor of fresh orange zest with the subtle earthiness of thyme and the sweet tartness of dried cranberries. Light, buttery, and tender, they’re great for afternoon tea!


Ingredients

  • 3¼ cups (450g) all-purpose flour

  • 1 stick (113g) cold butter, cubed

  • ½ cup (100g) sugar

  • 4 tsp baking powder

  • 1 egg, whisked

  • ¾ to 1¼ cups milk

  • 2 tbsp orange zest

  • 1 tbsp fresh thyme leaves

  • ½ cup dried cranberries


Instructions:

  1. Preheat oven to 350°F (180°C).

  2. In a bowl or food processor, mix flour, sugar, and baking powder.

  3. Add cubed butter and rub in with fingers or pulse until mixture resembles breadcrumbs.

  4. Stir in orange zest, thyme, and cranberries.

  5. Add egg and ¾ cup milk. Mix gently until dough just comes together. Add more milk if too dry.

  6. Turn dough onto a floured surface and pat or roll to about 1 inch thick.

  7. Cut into rounds or triangles and place on a baking tray.

  8. Bake for 15–20 minutes or until golden. Cool on a wire rack.
